Steffado

1 Rabbit (or Chicken)
1/2 c Olive Oil
1/2 c Vinegar
1 cn Tomatoes
1 c Beer (omit if canned spinach is used)
2 md Onions
Herbs (oregano, bay leaf, cloves, etc.)
1 c Garlic (yes, a cup, or more)
4 Bunches spinach (2 cans or 1 bag frozen)

Combine all ingredients together, EXCEPT spinach, in a Dutch oven and boil for 1 to 3 hours. Remove rabbit bones, add spinach, and cook until tender. Add more beer if additional liquid is needed. Serve with lemon, French bread, and Parmesan cheese.
